Hogget (or shearling) is a lamb aged 1-2yrs. It has the delicate tenderness of lamb yet the extra time spent on pasture allows it to develop a flavour that is richer than lamb but not as strong as mutton. Our hogget is 14 days matured in the fridge to enhance the texture and flavour.
